Rich's Dopplebock is a full-bodied dark Weinacht Bock
- 9.9 lbs dark unhopped extract
- 1 lb dark crystal malt
- .5 lb Munchen malt
- .5 lb Chocolat malt
- 1 lb toasted barley
- 3 oz Hallatauer Hops
- 1 oz Saaz hops
- Liquid Munchen lager yeast
- 1/4 tsp Irish Moss
The procedure:
- Step-mash the grains to conversion
- sparge with liquid to bring volume to 3.5 gallons
- add extract and 1/2 boiling hops. At 30 minutes, add remainder of boiling hops
- Add Irish moss at 50 minutes. Add flavor hops at 58 minutes.
- Sparge, cool, pitch yeast to 5.5 gallons wort.
- Rack to secondary after 3-5 days
- Bottle (with 3/4c corn sugar for conditioning) after all activity is stopped.
Notes: Fresh from secondary, the brew is drinkable--but very harsh. Age at least one month before drinking.
